Dinner from the vegan Italian cookbook

August 31, 2009

Monday is done!!

I am super excited for the weekend cause two of my college girlfriends are coming to visit! It is definitely going to be a SATC weekend!

After work I came home to head into the gym for a cardio/strength workout.  I did 30 minutes on the Stairmaster and then moved on to a back and biceps workout.  Here is what I did;

  • Assisted pull ups – 3 sets of 10 at 100lbs
  • Seated rows- 3 sets of 10 at 58lbs
  • Lat pull downs- 3 sets of 10 at 60lbs
  • Hammer curs- 3 sets of 10 at 40lbs
  • rope curls- 3 sets of 10 at 45lbs
  • bar curls- 2 sets of 10 at 45lbs and 1 set at 50lbs
  • I also did abs on the Captains Chair – 3 sets of 20

To finish up the workout I did 7 minutes of the elliptical.

I am definitely craving a run but I am still planning on taking this week off.  Even though my foot feels considerably better than Saturday.  Yay!!

We had a guest for dinner.  My husbands friend from business school is staying with us for the night while he interviews.  So it was nice to cook for an additional person.

Dinner came from this book:

And I made a Italian Vegetable Brown Rice Casserole.  It took a little longer to make than I expected but it timed well with when my Husband came home from work.

Now off to relax and watch some tv and start a new day!

Good Night!

Is weird to crave salt at 11am? I thought it was but I gave in to my craving at went to the vending machine and bought this.

Plus I have a feeling that this really won’t curb my hunger for lunch in 30 minutes…

So fresh and so clean!

August 30, 2009

Another weekend has come and gone!

Today was spent cleaning my apartment from top to bottom, grocery shopping, laundry and hitting up the gym for a quick workout.

My original plan was to do yoga today to stretch out my legs from the 10 miler I was suppose to do yesterday but for two reasons that changed. One, I never did the 10 miler and two, the yoga class I was planning on taking was during the time the couch cleaners were coming.

So instead I did 30 minutes on the elliptical reading my Fitness Magazine and then I stretched for 30 minutes.  I never stretch but my legs were craving it… actually NEEDING it!

I definitely need to fit in a yoga class sometime early this coming week.

Tonight’s dinner was millet burgers, cabbage slaw and fresh corn on the cob. But guess what I forgot to take a picture!!! I have extra millet filling that I plan on making more burgers with, so when I do I promise to take a picture of it.

So here is a question before I sign off, I know I need to start adding in stretching time after my workouts and runs.  How long should a good post-workout take?

Setting the apartment on FIRE!

August 29, 2009

Not really.. but my husband wanted to make a juicy steak for himself for dinner and since we live in an apartment with no access to a grill, he broiled it.  Which is a great indoor technique but the smoke from doing it got a little out of hand and before you knew it the apartment was filled with smoke and the fire alarm was going off.  Exciting!

But don’t worry he says his steak came out perfect! 😉

I on the other hand I made a bbq tofu, apples, sweet potatoes and wheat berries recipe that I took from Ms. Hangry Pants.  Here is the recipe.  Easy to make and very tasty.

And with it I had a glass of Chenin Blanc.  Great way to end a Saturday.

We got most of to-do’s taken care of.  But I still have more cleaning to do for tomorrow. Which is ok  cause today we went to Target and bought the Bissel  Pet Hair Eraser Vacuum.  It isn’t the Dyson Animal but it will have to make do.

Alright, have a great night I am off to watch a movie with my husband.

Good Night!

P.S. I think I am finally figuring out this picture uploading thing…

Oh I think I have an injury…

August 29, 2009

My husband and I were up to 1:30am last night trying to put ourselves on a monthly budget (we are trying to save more).  Thank goodness he is good at numbers and spreadsheets cause his final product blew my simple calculations out of the water.

Anyway, waking up this morning at 7am was tough… I snoozed and snoozed and snoozed and next thing I knew it was 8:15am.  I leaped out of bed threw on my running gear and headed into the kitchen to fix my pre-run fuel.  Whole wheat toast with almond butter and a banana.

Now let me back up… on Thursday after the couple miles I walked from my office to Union Square I noticed that I had a slight pain in my left foot.  I thought nothing of it and figured it would go away.  Yesterday I noticed it mostly when I wore flats and flip flops.  I mentioned it to my husband last night but once again thought it would just go away.  Well I was wrong.

I started off on my run and felt a slight pain on the side of my left ankle and as I kept on running I felt the pain move further and further down the side of my foot! After about a mile  I noticed my stride was even different and I knew there that there was no way I could do another 9 more miles without damaging it more.  So I stopped and walked a couple minutes and then tried again, same pain.  So I made a decision that in order to be injury free on September 26th when I run my next 1/2 I should stop.  So I walked back home… feeling defeated.

I know I shouldn’t feel so defeated cause I did the right thing instead of working through the pain and possibly making it worse but I was so pumped to run the 10 miles this morning.  It was overcast and drizzling…perfect zoning out weather.

But still my foot did not stop be from putting in a decent workout at the gym.  I did 30 minutes on the Arc Trainer and then 23 minutes on the bike (why 23 minutes… I got hooked watching America’s Best Dance Crew on MTV and had to see the last group go up).  Finished the 53 minutes of cardio with some shoulders and abs.

I feel refreshed now but still kind of bummed.  My plan is to ice my ankle/foot and possibly wear the ankle brace I have laying around.

Grr… I knew I jinxed myself on Wednesday when I said to myself…”wow I have been running consistently since May and no injuries” and here we are.

Anyway, I have a full To Do list today.

  • Clean
  • Go to bank
  • CVS for rx refills
  • finish budget

Have a great Saturday!

I know it is almost Fall but at give me a few more weeks of Summer!

August 28, 2009

So I knew when I came into work it was cold and rainy, but I didn’t think 9 hours later it would still be cold and rainy! I mean, 65 degrees?? What is that for August? I am highly disappointed.  I think I actually needed a jacket today. Hopefully this won’t last too long.

Anyway, after I bounced out of work doing the Weekend Dance, I came home threw on my workout clothes and hit the gym for what was to be cardio interval day.

I did 30 minutes on the Arc Trainer, switching intervals every minute and a half.  Basically I gauged it by my heart rate, during the high intensity interval I kept my heart rate between 159-165 bmp and during low intensity interval I got my heart rate down to 149-153 bmp.  By the end of the 30 minutes I was nice and sweaty.

I  jumped on the bike as well for about 10 minutes, doing the same intervals as I did on the AT.

I then spent about 15 minutes doing abs.  I used the exercise ball to do:

  • 50 crunches with feet on the ball and lower back balancing on the ball
  • 25 side crunches on each side
  • Pike Touch – 3 sets of 15
  • 25 Regular side core crunches

Then off the exercise ball I did:

  • 25 bicycles
  • 20 regular crunches with legs flat on the floor
  • 1 minute plank
  • Side plank dips on each side – 45 seconds on each side

I love a good ab workout.  I haven’t taken an abs class in forever, my gym (which is the YMCA) doesn’t offer any… so sad.

I was starving by the time I got home, walked Willis and took a shower.  I had a yummy pasta dinner planned.

Creamy Lemon Pasta with Shrimp & Broccoli.  I used rice noodles instead of regular linguini.  It was tasty.  Definitely a keeper and will go in my recipe book.

My Husband is working late so it is just me my water and some trashy TV.  I actually need to get up to speed on True Blood.  So I think I have some Vampires in my sights tonight.

10 miller planned for early morning!

Good Night!

Homemade Pizza

August 27, 2009

Wow! My hunger kicked in earlier than usual.  I normally can’t tell a difference in my hunger levels if I work out in the morning versus in the evening but today I felt it!

I didn’t have my ice coffee this morning because I just wasn’t in the mood for it.  I drink coffee when I crave it.  I don’t need it, it doesn’t effect my moods or give me that jolt of energy like most say it does for them.  I can drink coffee right before bed and still fall asleep.  My husband never believed  me until he witnessed it for himself.  My body just naturally needs to sleep after 10:30pm!

Anyway, I brought my lunch to work like I usually do.  Leftover taco mix from last night on top of leftover quinoa from the night prior.  Nothing fancy.  I did not take a picture of it cause it was nothing “new”.   I hate having leftovers for dinner but I don’t mind them for lunch.  Strange?

I walked a little over two miles after work — down Broadway to 6th Ave then to 14th Street and then over to the R train.  When I got home I was starving so I immediately started on dinner.  When I met my husband he would make fun of me for eating so early (he was eating at like 9:30-10:00pm, such a night owl) so I pushed my dinner times  back and at one point we were eating at 9pm! Now that is just too late for me.

Now that he works late we don’t eat together that often so I can eat whenever I choose.  Tonight it was 6:30pm.  On the menu for tonight was homemade pizza.  I bought the premade crust at TJ’s and went from there adding, garlic, zucchini, eggplant, pineapples, spinach and some goat cheese.  Then to cover up the pie I added the shredded cheese from last night.  Sprinkled with some oregano and basil.

While the pizza cooked I enjoyed a glass of this:

Pizza was tasty if I do say so myself.

So now that my tummy is nice and full.  I have an evening of Big Brother Live Eviction plus quality time with the pup!
